WHAT IS CHOCOLATE, AND WHERE DOES IT COME
FROM? With this kit, you can make chocolate and white chocolate.
The chocolate, as we are most familiar with is made from cacao
beans which are primarily grown in Central America and Mexico.
Chocolate as we know it has only been available for about the
last 100 years. Spanish explorers who came to Mexico in
the1500's first found the Aztecs drinking a beverage called "xocolatl"
(pronounced "ho-ko-la-tol,")made from cacao beans, water, and
sometimes hot peppers. The Spanish explorers brought the
beverage back to Europe, but since it was so bitter, they added
sugar and often vanilla flavor. Chocolate was a heavily guarded
secret for about 100 years. The Spanish would not let anyone in
Europe know how or where the chocolate grew. Cacao beans are
comprised of about 50% fat (cocoa butter) and until a Dutch
chemist, Conrad Van Houten invented the chocolate press, it did
not taste that great. The Press enabled the cocoa butter to be
separated from the cocoa powder. This is where our chocolate
candy and hot cocoa, as we know it developed.
